Today I’d like to share a delicious Spring-inspired recipe. It’s a fresh veggi thai salad for a fit and healthy lifestyle and spring clean eating! I prepared for todays Easter-Barbecue. If you like it hot, fresh and spicy, then you will love this salad. I really like the freshness of the salad and I appreciate that it is a perfect and fast side dish for any occasions. I also tried it with Sushi and Curry, which fits perfectly. It’s really easy, quick and suitable for every level of cooking. Even my boyfriend can manage it…;-)))
1.) First, prepare the dressing. You need lemon, garlic, chili, honey and soy sauce.
Mix together the fresh juice of one Lemon with 1 teaspoon garlic, chopped dried chili (if you like it hot take the whole chilly, if not take less…) a few tablespoons of soy sauce and 2-3 tablespoons honey (depends how sweet you like)
2.) Next, Prepare your veggies. I shredded my carrots, cabbage, and zucchini and place in a large bowl. Next, chop spring onion and cilantro (my boyfriend don’t like cilantro, thats why I didn’t use it) and mix it with the rest of the veggies.
3.) Then mix together chopped veggies with the dressing and some pinches of Allspice or Quatre Éspices (a mixture of cinnamon, cloves, nutmeg and ginger)
4.) Finally serve the salad with some chops cashews on top.
Thats it…! You see…very easy and delicious and yes…this fresh veggie Thai salad is 100% gluten free, clean and has very little calories!
