Fit foodie can be delicious, too!!!

For many people, eating healthy is a chore. When the world is filled with glorious pastas, the cheesiest of pizzas, and layers of cakes.

I know sometime it’s hard…but I try to live a healthy and balanced lifestyle through delicious and beautiful recipes.

I would like to show you how easy and comfortable is it to eat clean. I believe it’s possible to enjoy meals that are healthful yet delicious and comforting.

If you don’t know where to begin when it comes to making healthy food choices or if you are already following a healthy diet but need some new recipe ideas. I have gathered together some meals for fresh, seasonal, gluten free and high protein cooking and baking.

So check out my passion for delicious food and a desire to make healthy eating easy, tasty, and fun.

 

Breackfast:

Gluten free healthy sandwich bread with almond and rice flour. Topped with fresh avocado and tomatoes and self-made chicken salad.

I had a left over of slow cocked chicken of yesterday and I mixed it with fine minced vegetables like paprika, green onion, cucumber and added  a bit cream cheese and yogurt. Finally, add spices depending on your taste.

Lunch

Don’t you just want to get lost in this colorful turkey bowl?

I bought at the farmers market fresh arugula and sprouts. And prepared a salad with this freshness stuff.  Arugula, sprouts, spring onions tomatoes and avocado. Topped it with a piece of grilled turkey and a self-made honey mustard vinaigrette with chives.

Snack

Healthy eating should always include dessert or cakes.

So I backed a fast, healthy, high protein and gluten free cheese cake with fresh berries.

Just 4 eggs, 500g quark and 100g cheese cream, organic honey, lemon juice, vanilla essence, 3-4 tablespoons rice semolina and baking powder. I mixed all ingredients well and put it in a rectangular baking pan. Finally I topped it with fresh blueberries and strawberries. Then at the oven until it’s golden brown. I like it nicely chilled…especially if it’s a hot summer day.

Dinner

Buddha bowls!!!

Why?

It will make your life so much easier during the week and help fuel healthy habits. What is a buddha bowl? Essentially it’s a whole bunch of good stuff in a bowl topped with more good stuff.

ANATOMY OF A BUDDHA BOWL

Whole Grains:

  • brown rice/wild rice
  • quinoa
  • millet
  • cous cous

Lean Protein:

  • chicken
  • beans
  • tofu

Vegetables :

  • ANY AND ALL (grilled, steamed, sauteed, or raw)

NUTS/SEEDS/DRESSING

  • raw nuts (cashews and walnuts)
  • seeds (sunflower seeds and pepitas)
  • dressing: (vinegar-based, avocado-based, EVOO)

 

My buddha bowl this evening was quinoa, honey roasted tofu, red paprika, rosted kale, cherry tomatoes, sesame seed, fresh cilantro and lime juice.

There’s no right or wrong when it comes to buddha bowls. Use flavors that you love and have fun with it!
